Widow Jane The Vaults is the Brooklyn brand's yearly release of its oldest bourbon. This bottle carries a 15-year age statement. It is a blend of straight bourbons from barrels Widow Jane has set aside for the series. Recent editions drew on whiskey from Kentucky, Tennessee and Indiana. Each year the blend gets a different wood finish, so no two releases taste quite the same.
One thing stays the same every year. Widow Jane cuts the bourbon to proof with limestone water from the Rosendale Mines in upstate New York. It goes into the bottle at 99 proof, or 49.5% ABV. Each edition is a limited run.
Pour a glass and give it a minute to breathe. You should find toasted oak first, then dried fruit and warm spice. The palate brings vanilla and cinnamon sugar over a firm oak frame. The texture feels rich without turning heavy. The finish runs long, with oak and gentle spice that keep you coming back.
Try it neat first so you can follow how it opens up. A few drops of water will bring out more of the sweet side. One large ice cube works too if you like it cooler. With this much age, it is a bottle for sipping rather than mixing.
Pair it with a dry-aged steak, aged cheddar or a square of dark chocolate. Roasted pecans and bread pudding also play well with the oak and spice. If you collect older bourbon, this one deserves a spot on your shelf. Check the label for the release year, since the finish changes each edition.
