Each 70 mL PurePitch® Next Generation pouch contains approximately 150 billion cells, providing enough healthy yeast to ferment a standard 5-gallon batch without requiring a starter for most moderate-gravity lagers. WLP830 is ideal for brewing German Pilsner, Helles, Märzen, Vienna Lager, Bock, Schwarzbier, and many other traditional lager styles where clean fermentation and excellent drinkability are essential.
WLP830 produces minimal esters and sulfur when properly managed, allowing both malt complexity and hop bitterness to shine without introducing unwanted fermentation character. Its balanced fermentation profile creates bright, crisp lagers with exceptional clarity, smooth body, and a clean finish, making it one of the most versatile strains for both pale and dark lager recipes.
This liquid lager yeast features medium flocculation, 74–79% attenuation, STA1 negative status, and an alcohol tolerance of 5–10% ABV. It performs best between 50–55°F (10–13°C) and is packaged in White Labs' PurePitch® Next Generation pouch with approximately 150 billion cells for reliable pitching rates and consistent fermentation performance. The strain is well suited for both traditional German brewing techniques and modern lager production.
For best results, store refrigerated between 33–38°F and do not freeze. Pitch cold into well-oxygenated wort and maintain fermentation temperatures between 50–55°F throughout primary fermentation. While one pouch is suitable for most standard-strength lagers, a yeast starter is recommended for higher-gravity beers or older yeast. Adequate lagering time, proper oxygenation, and healthy pitching rates will maximize clarity, clean fermentation, and overall beer quality.
