Introduction
Undone No. 5 'This is Not Italian Apero' is a non alcoholic bittersweet aperitif originating from Hamburg, Germany. The brand was founded in 2019 by professional cocktail experts with a mission to prove that high quality ingredients and passion, rather than alcohol content, define a great drink. The distillery uses a patented process to dealcoholize real Italian aperitifs, preserving the essence of traditional aperitivo culture.
Spirit Description
This non alcoholic aperitif presents a smooth vermilion or deep orange red appearance. The aroma is characterized by bright citrus oils and herbal complexity, featuring scents of sweet orange zest and traditional Italian botanicals. On the palate, it delivers a refreshing and zesty profile of sweet orange and rhubarb, balanced by the herbal depth of gentian and a light sweetness. The body is light and crisp with a sophisticated botanical structure, leading to a clean finish with lingering notes of citrus and bitter herbs. It contains less than 0.3% alcohol by volume.
Food Pairing
The bittersweet structure and refreshing acidity of this aperitif make it a versatile partner for a wide range of light fare. It pairs beautifully with classic antipasti, mixed olives, and Italian cheeses such as pecorino or ricotta crostini. For a more substantial pairing, it complements Mediterranean flavours including grilled seafood like prawns and scallops, or light pasta dishes such as ravioli with cod. It is also an excellent accompaniment to salty snacks and small fried appetizers like salt cod croquettes or Milanese meatballs.
Distinctive Features
Undone No. 5 is distinguished by being crafted from actual de-alcoholized Italian aperitif rather than simple botanical infusions, ensuring an authentic 'Aperol style' experience. It is a mindful choice for health conscious consumers as it is vegan, gluten free, and contains approximately 18.6 calories per 30 ml serving. The recipe uses natural ingredients including rhubarb roots, gentian shoots, and orange juice concentrate, with coloring derived from sweet potato and carrot. This spirit is specifically engineered to provide the necessary 'bite' and complexity required for professional grade alcohol free cocktails.
Serving Suggestions
To best enjoy its 'golden hour' elegance, this aperitif should be served well chilled over plenty of ice. It is the essential ingredient for an 'Italian Spritz UNDONE', made by mixing 1.5 oz of the spirit with 3 oz of non alcoholic sparkling wine and a splash of soda water in a wine glass. It can also be enjoyed as a simple long drink when paired with premium tonic water and garnished with a fresh orange slice. For optimal quality, it is recommended to store the bottle in a cool place away from sunlight and consume within two months of opening.
