Tasting notes: Rose hips, hibiscus & red berries
Kapsokisio is a washed coffee from the Kapsokisio wet mill on Mount Elgon, Kenya, produced by several hundred smallholder farmers. Around 90% of the coffee delivered to the mill is the K7 cultivar, with smaller amounts of SL28 and SL34. Tim Wendelboe has worked with the mill since 2012 and helped expand its drying capacity so more coffee could be handled carefully during the peak harvest.
After hand sorting, the cherries are depulped and density-graded, then dry fermented overnight for roughly 12 to 16 hours. The coffee is washed, graded again and dried on raised tables for about 10 to 14 days. Kapsokisio stands apart from many central Kenyan coffees, offering crisp rose hip, hibiscus and fresh red-berry flavours with a distinctive floral and fruit-forward character.
