Redemption Sur Lee is a straight rye whiskey with a clever twist borrowed from winemaking. In France, some wines rest “sur lie,” on their spent yeast. Redemption tried the same idea with whiskey. Before aging, the team adds whiskey lees, the backset left after distilling, to each barrel. The barrels are then rotated now and then, so the lees keep mingling with the spirit.
The base is the brand’s pre-Prohibition style mash bill of 95% rye. The whiskey is non-chill filtered before bottling. It joined the Redemption Specialty Series in 2022 as a very small release.
The nose opens with a floral lift that rye fans will know well. Underneath sits a soft, nutty backdrop. Some reviewers also find soft caramel there, then vanilla and sweet rye grain on the palate. On the palate, buttery notes of toasted marshmallow, maple and nutmeg roll in. It feels silky and rounder than most high-rye whiskey. A long, spicy finish pulls you back to the grain. Dry oak and a touch of pepper show up there too.
Redemption suggests you sip it neat or on the rocks. That way the extra depth from the lees can shine. It also makes a lovely Manhattan or another simple cocktail. Serve it with smoked meats, aged cheddar or a slice of pecan pie.
Pick this one up if you enjoy rye and like seeing a classic style pushed somewhere new. It is a fun bottle to share with friends who think they know rye already.
