Red Star Premier Cote des Blancs Wine Yeast is a premium dry wine yeast designed for aromatic white wines, fruit wines, apple wines, and hard ciders. Its slower fermentation promotes delicate fruit aromas while producing smooth, balanced flavor profiles.
This strain performs best between 64–86°F (18–30°C) and features an alcohol tolerance of 12–14% ABV, making it suitable for a wide variety of fruit-forward fermentations.
Premier Cote des Blancs has high nitrogen demand, medium-low SO₂ production, and comes in a 5g packet capable of treating approximately 1–6 gallons.
For best results, ferment within the recommended temperature range while providing adequate yeast nutrients when needed.
Trusted by home winemakers, this strain is an excellent choice for preserving fresh fruit character in wines and ciders.
