Introduction:
Penfolds Bin 389 Cabernet Shiraz is an iconic red blend, often referred to as ‘Baby Grange’ due to its maturation in barrels that previously housed Grange. First crafted in 1960 by the legendary Max Schubert, this wine exemplifies Cabernet Sauvignon’s structure and Shiraz’s richness, delivering a powerful yet balanced expression of Penfolds’ signature style.
Tasting Notes
- Nose: A classic Penfolds aroma, featuring deep tones of mahogany, cigar box, and sweet oak spices, lifted by notes of summer berries, baking spice, and hints of tart red currant and cranberry.
- Palate: Cocoa powder-like tannins create a smooth yet profound texture. Cool-climate Cabernet fruit shines with vibrant blackberry, mulberry, and wild cherries, while sourdough nuances add depth and complexity.
- Finish: Long and structured, with layers of plum, tart morello cherries, and rustic spice, evolving beautifully over time.
Pairings
Pairs exceptionally well with grilled ribeye, slow-braised short ribs, and rack of lamb. Also complements aged cheddar, charcuterie, and rich mushroom dishes.
