Brew authentic Belgian-style ales with Mangrove Jack's M31 Belgian Tripel Yeast, a premium dry ale yeast designed for Belgian Tripels, Trappist ales, Belgian Golden Strong Ales, Saisons, and other expressive Belgian beer styles. M31 delivers the signature balance of fruity esters, spicy phenolics, and a highly attenuated dry finish while supporting beers up to 10% ABV.
Mangrove Jack's M31 is engineered to produce the complex fermentation profile expected from classic Belgian brewing traditions. The strain develops rich fruit character alongside peppery spice and subtle alcohol warmth, allowing malt complexity and Belgian yeast character to remain the focal point of the finished beer. Its broad fermentation range also gives brewers flexibility while maintaining authentic Belgian flavor development.
Each 10g sachet contains active dry Saccharomyces cerevisiae ale yeast suitable for fermenting up to approximately 23 L (6 US gallons) of wort. With very high attenuation of 82–92%, medium flocculation, and an ideal fermentation range of 64–82°F (18–28°C), M31 creates dry, highly drinkable Belgian ales with excellent complexity.
For best performance, sprinkle directly onto wort or rehydrate according to your preferred brewing process. M31 performs exceptionally well in Belgian Tripels, Trappist Singles, Belgian Golden Strong Ales, Belgian Blonde Ales, Belgian Dubbels, Bière de Garde, and Saison-inspired recipes.
