Tasting notes: Blueberry, raspberry and milk chocolate
Rodrigo Sánchez Valencia produced this Purple Caturra at Finca Monteblanco in Huila, Colombia, at 1,730 metres. The Mora Azul process uses a carefully managed fruit culture to build vivid berry character.
A mother culture made with coffee cherries, sugar, molasses and concentrated blueberry juice ferments before being introduced to the pulped coffee in sealed tanks. Careful sun and shade drying preserves a creamy, bright cup with blueberry, raspberry and milk-chocolate notes.
