Highland Park Cask Strength Heather marks a groundbreaking shift for the Orkney distillery, serving as the first expression in its refreshed cask strength series and its first-ever release composed entirely of 100% peat-smoked barley. Rather than relying on their traditional blend of peated and unpeated malts, this edition isolates the distillery's signature Hobbister Moor heather peat to showcase its unique profile at a towering natural cask strength. Matured in a combination of first-fill European and American sherry-seasoned oak casks alongside select refill barrels, it features a beautifully un-diluted, full-flavored experience. The nose is highly aromatic, opening with smoldering bonfire smoke, mossy earth, and a perfume of wild heather, layered over rich vanilla pod, plum jam, and brandy butter. On the palate, a syrupy texture delivers an intense but rewarding wave of charred marshmallow, dry herbal smoke, salted caramel, and dark chocolate-covered coconut, enlivened by ginger powder and warming cinnamon. The finish is remarkably long, rich, and warming, revealing a lingering trail of toasted oak, almonds, and sweet, fragrant heather smoke.
Food Pairing: Slow-cooked venison roast, charcoal-grilled ribeye steak, high-quality dark chocolate-covered sea salt caramels, or an intense blue cheese like Stilton.
