Giants & Gentlemen Old Tom Gin is a craft spirit produced in Ontario, Canada. Inspired by the 18th-century English tradition of slightly sweetened "Old Tom" style gins, this Canadian craft expression features a grain neutral base spirit combined with a refined selection of botanicals including juniper, citrus peel, coriander, and warm spices. Post-distillation, it receives a delicate touch of sweetness to round out the spirit, creating a smooth, rich, and approachable profile that bridges the gap between a crisp London Dry and a malt-forward Genever.
Food Pairing: Charcuterie boards, mild blue cheese, roasted pork belly, lemon tarts, and dark chocolate desserts.
Tasting Notes: Crystal clear in appearance with a rich, soft, and slightly silky mouthfeel.
Nose: Soft and inviting up front, featuring aromas of candied lemon peel, subtle orange blossom, and gentle piney juniper, backed by warm spice and a touch of vanilla sweetness.
Palate: Smooth and round on the palate, opening with a pleasant wave of soft botanical sweetness, lemon curd, and juicy citrus, evolving into mellow resinous juniper, coriander, and gentle wood spice.
Finish: Medium-long, velvety, and balanced with lingering notes of warm baking spices, subtle citrus oils, and a soft, rounded juniper tail.
Serve: Serve over ice topped with premium tonic water or ginger ale, garnished with an orange twist, or build into a classic Tom Collins, Martinez, or Martinez-style cocktail.
