Produced by the Beau family at Maison Paul Beau in the village of Segonzac, Paul Beau Hors d'Age is an award-winning single-estate cognac from the heart of Grande Champagne. Distilled exclusively from Ugni Blanc grapes grown, fermented, distilled, aged, and bottled on the family estate, this multi-award-winning expression comprises eaux-de-vie aged for a minimum of 25 to 30 years in French oak casks. The long maturation in the damp family cellars brings out the full depth of the premier cru terroir, delivering a rich, velvety body with remarkable aromatics including candied orange peel, dried figs, sweet tobacco, cocoa, and intense oak rancio.
Food Pairing: Rich dark chocolate, blue cheese, aged Gouda, fig and walnut tart, roasted chestnuts, or enjoyed as a contemplative digestif alongside a fine cigar.
Tasting Notes: Deep amber-mahogany with warm copper and fiery topaz highlights, displaying a viscous body with thick, slow-moving legs along the glass.
Nose: Deep, complex, and highly mature, opening with candied orange peel, dried fig, and dark raisins, followed by sandalwood, pipe tobacco, leather, toasted hazelnut, and pronounced oak rancio.
Palate: Velvety, broad, and luxurious on the palate, featuring caramelized plum, wildflower honey, and dark cocoa upfront before unfolding into soft oak tannins, nutmeg, cinnamon, and subtle floral jasmine.
Finish: Exceptionally long, warm, and elegant with lingering notes of sweet wood spice, dried stone fruits, light leather, and a dry, lingering rancio finish.
Serve: Enjoy neat at room temperature in a tulip glass, letting the spirit rest for several minutes to allow its 30-year bouquet to fully open.
