Selected by Marc Darroze as part of the esteemed "Collection Unique" series, this single-estate vintage expression originates from Domaine de Paguy, owned by the Darzacq family and situated in Betbezer d'Armagnac. Distilled in 2012 by master distiller Gironi using a continuous single-column alambic stills and aged in regional Gascon oak casks, the vines benefit from the estate's famous sables fauves (tawny sand) soils. It delivers a remarkably vibrant, fruit-forward profile balanced by delicate baking spices, herbal infusions, and soft oak tannins.
Food Pairing: Soft cheeses like Camembert or Brie, roasted duck breast with peach glaze, apple tarte tatin, fruit tarts, or prunes wrapped in bacon.
Tasting Notes: Bright, brilliant fiery amber with warm golden highlights and smooth, medium-bodied viscosity along the glass.
Nose: Expressive and fragrant, opening with candied apricot, tarte tatin, and fig jam, followed by fine baking spices like vanilla, cinnamon, and star anise, with delicate herbal undertones of linden and verbena.
Palate: Rich, round, and firm yet silky on the palate, featuring candied orchard fruits, salted butter caramel, and gentle wood tannins upfront before evolving into subtle liquorice and warm spice.
Finish: Long, warm, and persistent with lingering accents of stewed stone fruit, sweet caramel, and soft oak.
Serve: Enjoy neat at room temperature in a tulip glass, letting it rest for a few minutes before tasting.
