Caymus Napa Valley Cabernet Sauvignon comes from one of Napa's best-known family wineries. Caymus was started in 1972 by Chuck Wagner and his parents, Lorna and Charlie Wagner Sr. Their first release was just 240 cases of Cabernet. Today the winery is still family-owned and run from Rutherford, in the heart of Napa Valley.
This half bottle holds 375ml, or about two and a half glasses. It is a handy size for a dinner for two. It also lets you try a famous wine without opening a full bottle.
Caymus is known for a dark, concentrated style. In the glass, it shows a deep, rich red. On the nose you will find blackberry, cassis and black cherry, with hints of vanilla and mocha. The palate is lush and smooth. Ripe dark fruit and cocoa meet soft, ripe tannins. The finish is long, with well-built tannins that keep it in shape.
Caymus describes this wine as soft and fruit-driven from release. So you do not need to cellar it for years. Still, giving it a few minutes in the glass helps the fruit open up.
Serve it just below room temperature. Pair it with grilled steak, roast lamb or aged cheese. A mushroom risotto or a blue cheese burger works well too.
