The Balance of Oxidative Ageing
This unique PX is aged in a solera started in 1964. It combines elements of oxidative ageing (like Oloroso or Palo Cortado) with the natural sweetness of PX.
Production:
Grapes are lightly sun-dried for three days before pressing and fermenting in barrel up to 17% natural alcohol. A careful addition of raisin juice each year adds subtle sweetness (around 45 g/L), creating a wine that is rich but never cloying.
🌡️ Temperature: Recommended temperature to enjoy: 14ºC.
🍷 Glass: Wide and open glass, but always in moderate quantity.
🛢️ Aging Potential: Under optimal conditions it can exceed 50 years.
