Brew authentic farmhouse ales with Wyeast 3711 French Saison, a premium liquid yeast strain known for its exceptionally high attenuation, reliable fermentation performance, and expressive Belgian character. This versatile diastaticus (STA1+) strain produces bold peppery spice, bright citrus notes, and subtle fruit complexity while finishing remarkably dry with an unexpectedly silky mouthfeel. Each Wyeast Activator™ pack contains approximately 100 billion cells, providing enough healthy yeast to ferment a standard 5-gallon batch under appropriate conditions. Wyeast 3711 is ideal for brewing Saison, Belgian IPA, Belgian Blond Ale, Belgian Golden Strong Ale, Belgian Dark Strong Ale, and Bière de Garde.

Wyeast 3711 is prized for its vigorous, dependable fermentation and ability to fully ferment complex sugars while maintaining excellent flavor balance. It develops layered peppery phenolics, citrus zest, and light fruit esters that complement both hop-forward and traditional farmhouse recipes. Unlike many saison strains, it ferments consistently across its recommended temperature range and is also well suited for restarting sluggish or stalled fermentations.

This liquid ale yeast features low flocculation, 77–83% attenuation, POF positive (STA1+), and an alcohol tolerance of 12% ABV. It performs best between 65–77°F (18–25°C) and is packaged with approximately 100 billion cells for dependable fermentation performance. Its highly attenuative nature makes it an excellent choice for creating dry, expressive Belgian and farmhouse-style beers.

For best results, store refrigerated between 33–38°F and do not freeze. Pitch cold into well-oxygenated wort and ferment within the recommended temperature range. One Activator™ pack is suitable for many standard-strength 5-gallon batches, while a yeast starter is recommended for higher-gravity beers, older yeast packs, or when additional cell count is desired. Because this is a STA1+ diastatic strain, use proper cleaning and sanitation practices to prevent cross-contamination with non-diastatic beers.

Trusted by homebrewers and professional brewers alike, Wyeast 3711 French Saison delivers consistent fermentation, exceptional attenuation, and authentic farmhouse character. Its healthy cell count, dependable performance, and signature peppery-citrus profile make it an outstanding choice for brewing crisp, flavorful saisons and Belgian ales with a dry finish and remarkable drinkability.
