Wyeast 1728 delivers a clean, well-balanced fermentation that highlights caramel, toffee, roasted malt, and rich specialty grain flavors without excessive ester production. Fermented on the lower end of its temperature range, it produces an exceptionally crisp, neutral profile. As fermentation temperatures increase, the strain develops light fruit esters that add complexity while maintaining excellent balance. Its high flocculation promotes brilliant clarity and efficient conditioning.
This liquid ale yeast features high flocculation, 69–73% attenuation, and an alcohol tolerance of approximately 12% ABV. It performs best between 55–75°F (13–24°C) and is packaged with approximately 100 billion cells for dependable fermentation performance and consistent brewing results. Its broad fermentation range makes it suitable for both cool, clean fermentations and warmer fermentations with increased ester expression.
For best results, store refrigerated between 33–38°F and do not freeze. Pitch cold into well-oxygenated wort and ferment within the recommended temperature range. One Activator™ pack is suitable for many standard-strength 5-gallon batches, while a yeast starter is recommended for higher-gravity beers, older yeast packs, or whenever additional cell count is desired. Cooler fermentation temperatures produce the cleanest profile, while warmer temperatures encourage a modest increase in fruity esters.
