The Chestnut Ale is the legendary seasonal flagship from Whistler Brewing Company. First released as a winter specialty, its massive popularity turned it into a highly anticipated annual tradition. It is one of the most unique "nut ales" in Canada, specifically designed to capture the cozy, aromatic essence of autumn and winter in the mountains. Rather than relying solely on roasted malts for flavor, Whistler uses real roasted chestnuts to create a profile that is distinctly earthy and savory-sweet.
Beer Description
This ale pours a deep, clear mahogany-amber with a creamy, off-white head that leaves a moderate lace on the glass.
Aroma: It features a warm, inviting, and highly evocative nose. You’ll find immediate notes of roasted nuts, caramel, and vanilla, followed by a subtle "herbal" sweetness that is characteristic of the chestnut infusion.
Palate: On the tongue, it is medium-bodied with a smooth, velvety texture. It leads with a rich malt sweetness—think toffee and toasted bread—which transitions into the star of the show: a deep, nutty, and slightly smoky chestnut flavor. The finish is clean and mellow, with very little hop bitterness, allowing the warm, nutty notes to linger.
Profile: It has an ABV of 5.0% and a low bitterness of 25 IBU, making it an incredibly approachable and "comforting" beer for cooler weather.
Technical Notes: Brewed with a blend of specialty malts and real roasted chestnuts added during the brewing process. The use of chestnuts provides a unique starch and sugar profile that differs from barley alone, resulting in a specific "woody" sweetness and a silky mouthfeel that distinguishes it from a standard Brown Ale or Porter.
