Volans Still Strength Blanco is tequila the old-school way. It comes straight off the still at 106 proof, with no water added to bring it down. Nothing is added for flavor or color, and it stays unfiltered.
It is made at El Pandillo in the Jalisco highlands, home of master distiller Felipe Camarena. He opened the distillery in 2007 and built much of its gear himself. His homemade machines even have nicknames, like the shredder "Igor" and the tahona "Frankenstein." The same place makes the well-loved G4 tequilas. Volans is run by Chad and Christina Allen, and they care about how the agave is grown. The brand uses organic agave and works in an eco-minded way.
Here's how the tequila takes shape. Mature blue Weber agave cooks for 22 hours in steam-heated stone and brick ovens. A mechanical tahona then crushes the cooked hearts. Fermentation happens in open air, both with and without the agave fibers. The team says the fibers add extra depth to the flavor. Wild yeast works alongside the Camarena family's own yeast strain. Local spring water and deep well water go into the mix. Finally, it is distilled twice in copper pot stills.
Raise the glass and cooked agave comes first, backed by black pepper and citrus. Minerals, fresh herbs and a hint of mint fill in the edges. The palate is rich and full. Sweet agave leads, then black pepper, bright citrus and a briny, mineral streak. A little mint returns as it opens up.
The finish runs long. It moves from sweet agave into peppery warmth and a salty, mineral note. For its strength, the alcohol burn is very mild. Judges noticed too, and it won Gold at the Agavos Awards in 2025.
Sip it neat at room temperature in a snifter or a copita. A few drops of water will open up even more aroma. It also makes a bold Paloma, Ranch Water or tequila Old Fashioned. Try it with ceviche, shrimp tacos, salsa verde or roast pork. If you love high-proof spirits and want pure agave flavor, this bottle is worth the hunt.
