Introduction
Undone No. 2 'This is Not Gin' London Dry Juniper is a non alcoholic spirit alternative produced in Germany. The brand was founded with the mission to provide high quality alternatives for bar enthusiasts, utilizing a patented process where alcohol is removed from real gin distillate to retain characteristic aromas.
Spirit Description
This non alcoholic spirit presents a clear and bright appearance, mimicking the look of a traditional London Dry Gin. The nose is greeted by the fragrance of freshly harvested juniper, complemented by crisp citrus tones and a subtle hint of cucumber peel. On the palate, it delivers a pronounced juniper essence and light herbal undertones, featuring vibrant flavours of lemon balm, subtle ginger warmth, and a touch of pepper. The body is crisp and clean with an authentic botanical complexity. It leads to a refreshing and long finish characterized by lingering citrus and botanical herbs. This product contains less than 0.3% alcohol by volume.
Food Pairing
The bright acidity and botanical profile of this gin alternative make it a versatile companion for various light and fresh dishes. It pairs exceptionally well with fresh seafood, such as grilled prawns, oysters, and smoked salmon, where the citrus notes enhance the briny flavours. For a more casual pairing, it complements Mediterranean dishes, fresh herb salads, and light appetizers like soft brie or goat cheese. It also serves as a delightful partner for sushi, as the crisp juniper and ginger notes mimic the traditional accompaniment of pickled ginger.
Distinctive Features
Undone No. 2 is distinguished by its use of real London Dry gin as a base, which undergoes a specialized dealcoholization process to preserve the essential oils and botanical structure. It is a health conscious choice, being certified vegan, gluten free, and low in calories, containing approximately 2.4 to 3 calories per 30 ml serving. The recipe features natural ingredients including juniper distillate, herbs, and spice extracts. Unlike many simple botanical waters, it is designed to maintain the 'bite' and complexity required to stand up in mixed drinks.
Serving Suggestions
This spirit alternative is primarily intended for mixing in classic gin based cocktails at a 1:1 ratio. For a signature 'G&T UNDONE', mix 50 ml of Undone No. 2 with premium tonic water over ice and garnish with a grapefruit zest or a slice of lemon. It is also an essential component for a non alcoholic 'Negroni UNDONE' when combined with Undone No. 7 Not Orange Bitter and Undone No. 9 Not Red Vermouth. For a garden fresh option, it can be muddled with fresh basil or cucumber for a 'Basil Smash' or 'Cucumber Collins'.
