The Dalmore Constellation Collection 1979 is an exceptionally rare 33 Year Old Highland Single Malt Scotch Whisky from The Dalmore Distillery, part of the Whyte & Mackay portfolio. Distilled in 1979, this expression spent its entire 33-year maturation in Cask #1093, a European oak ex-Sherry butt, before being bottled at 58.9% ABV. Only 295 bottles were produced. The long Sherry-cask maturation delivers an intense combination of dark fruit, treacle, citrus, chocolate, roasted nuts, coffee and mature spice.
Food Pairing: Dark chocolate, pecan pie, mature hard cheese, roasted nuts, fig cake, fruitcake or caramelized pineapple.
Tasting Notes: Rich and concentrated with mature Sherry influence, combining dark fruits, citrus, treacle, roasted nuts, chocolate, coffee and warming spices.
Nose: Allspice, rolling tobacco, pear, espresso and dark fruits with black treacle, marmalade, cracked pepper and sultanas.
Palate: Toasted pistachio, ginger, fig cake and Seville orange develop alongside vanilla, bitter chocolate, pecan and liquorice.
Finish: Exceptionally long and rich with sweet dried-fruit character, nutty toffee, Demerara sugar and caramelized pineapple.
Serve: Enjoy neat at room temperature in a tulip-shaped whisky glass. Allow it time to open before adding a few drops of water if desired.
