Tequila Ay Pa Todos Blanco is an unaged tequila made from mature 100% blue Weber agave. It comes from the Tequila Valley in Jalisco, Mexico, and is produced at NOM 1621.
It follows traditional methods and skips the diffuser. The agave cooks in an autoclave and is crushed in a roller mill. Fermentation uses steel tanks and deep well water. Two runs through a pot still follow. It is bottled at 40% ABV with no additives.
The nose is grassy and a little earthy, with cooked agave and a squeeze of citrus. The palate tastes fresh and crisp. Bright lime leads, backed by fresh agave, green herbs and a light mineral touch. The finish stays clean, with a soft hint of cooked agave.
This blanco shines in Margaritas and Palomas. You can also sip it neat, chilled or over ice. The 1-liter bottle is handy when you're making drinks for a crowd.
Pair it with ceviche, fish tacos, grilled shrimp or fresh guacamole. If you want a clean, agave-forward blanco for mixing, it's an easy bottle to keep around.
