SMWS Caramel Cascade 12 Year Old is a limited-release single malt Irish whiskey from The Scotch Malt Whisky Society, created in collaboration with Dunville's Irish Whiskey. Distilled on November 30, 2011, this expression matured in a combination of first-fill bourbon barrels and Palo Cortado sherry hogsheads before being bottled at 50% ABV. Released as Small Batch 29, Caramel Cascade delivers a rich and layered drinking experience, balancing honeyed sweetness, ripe fruit, warming spice, and complex sherry-influenced character.
Food Pairing: Sticky toffee pudding, roasted pork, aged Gouda, caramelized walnuts, dark chocolate truffles, and apple tart.
Tasting Notes: A rich and expressive Irish single malt offering flowing layers of honey, treacle, orchard fruits, tropical sweetness, caramelized nuts, chocolate, and aromatic spice.
Nose: Exotic wood, supple leather, baked banana, and delicate savoury notes, complemented by the atmosphere of an old sherry cellar.
Palate: Golden honey, dark treacle, stewed apples, ripe mango, caramelized walnuts, and nutmeg, developing into chocolate, cherry liqueur, and hazelnut sweetness.
Finish: Lingering caramel, nut brittle, roasted coffee, fresh mint, ripe plums, and delicate lavender honey.
