Simic Apricot Kajsija Brandy is a Croatian fruit brandy crafted by Distillery Simic from carefully selected ripe apricots sourced from local orchards. Controlled fermentation and precise distillation preserve the fruit's natural aromatic character, producing a clean and approachable rakija with expressive ripe apricot, delicate floral tones, gentle sweetness, and a soft, harmonious texture.
Food Pairing: Prosciutto, mild cheeses, roasted almonds, apricot tart, vanilla pastries, almond cake, fresh fruit, and lightly sweetened desserts.
Tasting Notes: Clear and fruit-driven, with an aromatic, harmonious profile centered on ripe apricot and a soft texture.
Nose: Warm, full aromas of ripe apricot accompanied by subtle floral tones.
Palate: Gentle and pleasantly fruity, showing clean apricot character with balanced natural sweetness.
Finish: Soft, with a short, gently sweet fruit note; IWSC has also described the expression as showing a long, spicy finish in competition tasting.
