Silent Noise Cloudy But Fine Chardonnay
This is a small-batch Chardonnay from the Lenswood GI in Adelaide Hills, made by Charlie O'Brien of Silent Noise. The name reflects Charlie's childhood surrounded by the hum of vineyard machinery and the quiet anticipation of wine in bottle.
Fruit is hand picked from low-yielding vines and selected for its A-grade quality. After four hours on skins, it is pressed slowly using a champagne cycle. Wild fermentation takes place in 100% new French oak sourced from six different cooperages.
The wine is aged unsulphured on lees for nine months and bottled without stabilisation or filtration. Charlie chose not to stabilise the wine because any further intervention risked muting its vibrant character. The result is a naturally cloudy wine with full texture and aromatic depth.
- Opens with ripe melon, tinned apricot and perfumed citrus blossom.
- The palate is golden and textured with lime curd, glacé apricot and custard Danish.
- Finishes with soft minerality and lingering citrus, unfolding gently with time in glass.
Pairs well with grilled white fish, soft cheeses or lemony vegetarian dishes.
