Signal Hill Canadian Whisky is crafted from Canadian corn and barley whiskies and blended with water from Newfoundland. The corn whisky is double distilled through a two-column still for a lighter character, while the barley whisky is pot distilled to contribute maltier, nutty flavours. The whiskies are matured across three cask types—new white oak, first-run bourbon and Canadian whisky casks—and bottled at 40% ABV without chill filtration. The result is a smooth, full-bodied Canadian whisky combining honey and vanilla with dried fruit, toffee, soft oak and gentle spice.
Food Pairing: Aged cheddar, roasted pork, glazed chicken, butter tarts, toasted nuts, or apple desserts with caramel and warming spices.
Tasting Notes: Rich amber and well-balanced, combining honey and vanilla sweetness with dried raisins, plums, caramel, toffee, soft oak and gentle spice.
Nose: Delicate and inviting, with honey and vanilla accompanied by dried fruit, raisins, plums and a subtle touch of spice.
Palate: Full and rounded, developing dried fruit and sweet cream sherry-like notes alongside English toffee, vanilla, caramel and soft oak.
Finish: Long and smooth, with lingering caramel, vanilla, oak and gentle warming spice.
Serve: Enjoy neat, over ice, or in classic whisky cocktails such as a Manhattan or Old Fashioned.
