Redbreast 12 Year Old is the bottle many people use to explain single pot still whiskey. It is made at Midleton, near Cork. Its recipe blends malted barley with raw, unmalted barley, a style unique to Ireland. It is then triple distilled in copper pot stills. That raw barley gives the spirit a creamy, oily weight you notice right away.
The whiskey spends at least twelve years in a mix of ex-bourbon barrels and oloroso sherry casks. The bourbon wood brings vanilla and toffee. The sherry casks add dried fruit and a nutty depth. It is bottled at 40%, so it stays gentle enough for easy sipping.
Nose it slowly. You get a complex mix of spice and fruit, framed by toasted wood. The sherry casks add raisins, apricot, fig and cherry, with a subtle floral touch. Toffee and dried fruit sit in the background. The palate is full and silky. Spice, fruit, sherry and toasted notes all take turns, with hints of nuts and orange peel along the way. The finish is long, and the spice and sherry fruit stay with you.
Judges have rewarded this bottle again and again. It holds a Double Gold from the San Francisco World Spirits Competition. It has also won Gold and trophies at the International Wine & Spirit Competition.
Pour it neat into a tulip glass. A few drops of water will open it up. It also makes a rich Old Fashioned or whiskey sour. Try it with dark chocolate, roasted nuts or a soft cheese. If you like layered whiskies that reward patience, this one belongs on your shelf.
