Rare Character Hurst Knoll 7 Year Rye Whiskey (101 Proof) is a purpose-built rye designed to excel in cocktails without sacrificing depth or character on its own. Crafted from high-rye Kentucky barrels—some older than the stated age—it delivers bold spice, balanced sweetness, and the structure needed to stand up to classic and modern cocktail ingredients. At 101 proof, it hits the sweet spot: flavorful enough to shine through modifiers, yet smooth enough to remain approachable. This is a rye engineered not just to sip—but to perform.
Origins & Craftsmanship
Hurst Knoll represents a more intentional, blend-driven approach from Rare Character—focused on creating a rye whiskey that thrives in real-world cocktail applications.
The whiskey is composed of sourced high-rye barrels from Kentucky, with components including barrels older than the 7-year age statement, adding additional depth and maturity to the blend. Rather than being a single-barrel release, it is carefully constructed to achieve consistency, balance, and versatility.
What sets Hurst Knoll apart is how it was developed. Rare Character’s founder Pablo Moix actively tested the whiskey across a wide range of cocktail formats, benchmarking it against common modifiers such as:
- Bénédictine
- Sweet and dry vermouths
- Campari
- Espresso liqueurs
The goal was to create a rye that could maintain its identity across both spirit-forward and modern cocktail builds.
As Moix notes, the whiskey performs across a wide range of applications—from a Vieux Carré to an Espresso Manhattan to citrus-driven highballs—where it consistently “shines.”
Bottled at 101 proof (50.5% ABV), the whiskey is dialed in to provide enough backbone for mixing while remaining smooth and integrated.
