Produced by Maison Ferrand at the Château de Bonbonnet, Pierre Ferrand Sélection des Anges ("Selection of the Angels") is a prestige premier cru cognac sourced exclusively from the chalky soils of the Grande Champagne subregion. Named in homage to the "angel's share", which is the portion of spirit lost to evaporation during extended barrel aging, this expression features eaux-de-vie matured for an average of 30 years in small French oak casks. Double-distilled on the lees in traditional un-jacketed copper pot stills, this decades-long aging process yields a profoundly complex profile defined by dried fruit, jasmine, dark chocolate, tobacco, and noble oak rancio.
Food Pairing: Rich dark chocolate, aged Roquefort or Comte cheese, spiced fruitcake, pecan pie, or enjoyed slowly as a contemplative digestif alongside a fine cigar.
Tasting Notes: Deep mahogany with brilliant fiery amber and antique gold reflexes, displaying high viscosity with slow, thick legs coating the glass.
Nose: Intensely fragrant, mature, and complex, opening with jasmine, dried violet, and candied orange peel, followed by dark raisins, dried fig, leather, dark chocolate, and pronounced oak rancio.
Palate: Velvety, rich, and luxurious on the palate, featuring caramelized plum, honeyed stone fruit, and cocoa upfront before unfolding into soft oak tannins, nutmeg, cinnamon, and subtle licorice.
Finish: Exceptionally long, warm, and sophisticated with lingering notes of sweet wood spice, dried fruits, fine tobacco, and a dry, lingering rancio warmth.
Serve: Enjoy neat at room temperature in a tulip glass, letting the cognac sit for several minutes to allow its 30-year-old bouquet to open fully.
