Tasting notes: Mango, cherry and brown sugar
The Hartmann family produces this Maragogype at Finca Hartmann’s Ojo de Agua plot in Santa Clara, Panama. Three of Ratibor “Chicho” Hartmann’s children, Aliss, Allan and Alexander, now run the family farm together.
The coffee grows at 1,500 metres and is naturally processed by dehydration in custom-built darkrooms. Phil & Sebastian optimizes the omniroast for filter, while noting that it can also produce expressive espresso.
