Champagne Paul Bara is a family-owned grower-producer based in the village of Bouzy, a 100% Grand Cru site in the Montagne de Reims, farming 11 hectares of Grand Cru vineyards. The Brut Réserve is a blend of Bouzy wines made from 80% Pinot Noir and 20% Chardonnay. Grapes are hand-harvested and whole-bunch pressed in small presses using only the heart of the pressings, with each plot vinified separately and fermented in stainless steel with no malolactic conversion. NV cuvées have up to 50% reserve wines added, with dosage up to 7 g/L for the non-vintage bottlings.
