Papayo returns for 2026 with a vibrant expression of this rare varietal grown by Wilton Benitez at El Paraíso 92 in Cauca, Colombia. Known for its naturally fruit‑forward character and lively flavor profile, Papayo’s elongated, papaya‑like seed shape hints at the bright, expressive cup it delivers. Wilton’s unique washed thermal shock approach further enhances its sparkling mouthfeel and amplifies the coffee’s vivid fruit tones, preserving purity, florality, and deep natural sweetness.
The cup opens with delicate floral aromatics and a fruit‑juice clarity, gradually revealing layered fruit notes and subtle complexity as it cools. Clean, well‑rounded, and quietly captivating, Papayo offers a truly delightful and memorable drinking experience.
