A bold, expressive, and highly characterful organic Spanish red wine crafted by winemaker Carlos Laso at the historic Pago Casa Gran estate in Valencia. Named after the ancient Iberian sword used to battle the Romans, this certified organic and vegan-friendly wine is a traditional Mediterranean blend of Garnacha Tintorera, Monastrell, and Syrah grown on limestone and white clay soils at 550 meters elevation. Vinified with 100% native yeasts and aged for 12 months in French oak barrels followed by an additional year in concrete tanks, it uncoils with an intense, savory bouquet of dark plums, ripe black cherries, and sweet blackberries, beautifully framed by notes of wild lavender, fresh rosemary, dark cocoa, and hints of toasted vanilla.
Food Pairing: This structured and robust red wine pairs spectacularly with grilled lamb chops, slow-roasted beef tenderloin, rich Bolognese pasta, or aged Manchego cheese.
