Oremus Tokaji Dry Furmint 'Mandolas' originates from Hungary, within the historic Tokaj region and the Tokaj Hegyalja subregion. Established in 1993 by the owners of Spain's iconic Vega Sicilia, the winery symbolizes the rebirth of the region through a unique combination of ancestral tradition and modern technology. The estate's winemaking philosophy focuses on single-vineyard expressions that highlight the minerality and versatility of the region's noblest variety, Furmint, with ageing taking place in a labyrinth of underground cellars dating back to the 13th century.
Wine Description
This wine presents a bright, pale yellow or medium lemon colour in the glass. The sensory profile is fragrant and complex, featuring an aromatic nose of honeysuckle, acacia, and jasmine alongside fruity notes of green apple, apricot, and lemon zest. On the medium-bodied palate, it is dry and expressive, delivering a dense texture with flavours of pear, Galia melon, and pineapple balanced by a vibrant, 'mouthwatering' acidity and a distinct saline minerality. The finish is remarkably long and persistent, characterized by a refreshing stony or chalky character.
Varietal Composition: 100% Furmint.
ABV: Typically between 13% and 13.5%.
Organic Status: While the winery utilizes sustainable agricultural practices, this specific wine is not typically certified organic.
Stylistic Notes: The wine is fermented in a combination of stainless steel (80%) and new Hungarian oak (20%), followed by six months of ageing in traditional 136-litre small barrels with weekly lees stirring to enhance complexity and structure.
Food Pairing
The racy acidity and mineral spine of this Furmint make it a versatile partner for a variety of elegant dishes. Suggested pairings include fresh seafood such as grilled sea bass or shellfish, as well as Asian-inspired fare like chicken satay or laksa. It also complements vegetarian options, including fresh vegetable salads, feta salad, or creamy pasta sauces, and works exceptionally well with mild goat cheese.
