Tasting notes: Grapefruit, dried apricot, fig and walnut
Gabriel Castaño Buendía produces this Pink Bourbon at Finca La Granada, a two-hectare family farm in Acevedo, Huila, Colombia. He was an early advocate for Pink Bourbon in southern Huila and has shared plant material and knowledge with neighbouring producers.
Ripe whole cherries ferment in bags for 90 hours before the coffee is rinsed and mechanically dried over three days. The process preserves a structured, fruit-led cup that Onyx roasts light for filter or espresso. Drying: Mechanical, three days.
