Old Soul Estate Collection 7 Year Pot Still Straight Bourbon feels like Mississippi soil, heat, and grain translated directly into the glass. This is very much a sense-of-place whiskey. Distilled on a 500-gallon pot still from a mash bill of 65% corn, 28% wheat, and 7% sorghum, it’s aged at least seven years in new American oak. Bottled at 111.5 proof as a limited estate release, it carries cask-strength weight without losing its easy sweetness.
The nose comes on sweet and a little earthy, like warm fairground air over a funnel-cake stand. Floral honey, vanilla, and bubble gum drift up first, chased by soft baking spice and toasted grain.
On the palate, the whiskey lands soft, sweet, and nutty, wearing the proof with more confidence than aggression. Molasses, caramel, and almond drive the core, with corn sweetness sitting deep rather than loud. A little vanilla cream, light oak, and gentle spice keep it from drifting into pure dessert mode. You taste heat and humidity as flavors seem to swell and stretch.
The finish runs on the shorter side but leaves an unmistakable signature. Grainy, slightly fruity, and spicy, it brings raisin, licorice, and cinnamon over a soft, sweet fade.
It’s dangerously repeatable neat, and absolutely sings in a simple rock pour where a big cube polishes the edges.
