Ol' Beautiful Okami Kasu is a flagship collaboration between Calgary’s Ol' Beautiful Brewing Co. and Chef Darren MacLean of the acclaimed Japanese restaurant, Shokunin. Designed specifically to bridge the gap between craft beer and Japanese culinary traditions, it is celebrated for its inventive use of specialty ingredients. It stands as a unique Japanese Ale that provides a sophisticated alternative to standard light lagers.
Beer Description
This Japanese-style Rice Ale is deceptive; it pours brilliantly clear with a pale straw to golden color and a clean, ivory-white head, visually mimicking a crisp pilsner.
Aroma: Subtle and clean, featuring light floral notes and a soft graininess, with a faint, intriguing "uptown funk" derived from its unique fermentation additives.
Palate: The mouthfeel is the standout feature surprisingly rich, silky, and almost creamy. It offers a gentle malt sweetness that transitions into a clean, boozy finish with a hint of savory complexity.
Profile: It has an ABV of 5.0% and a very low bitterness of 10 IBU, making it exceptionally smooth and highly compatible with delicate flavors.
Technical Notes: The recipe includes a substantial portion of rice to achieve its signature silky texture. The defining ingredient is Sake Kasu the residual rice paste left over from sake production, which imparts the beer’s distinctive creamy body and subtle, "boozy" funk.
