NON 5 Lemon Marmalade & Hibiscus is a sparkling, non-alcoholic wine alternative produced by NON, founded by Aaron Trotman in 2019 and made in a purpose-built facility in Melbourne, Australia. It is built from a verjus base pressed from Semillon and Chardonnay grapes grown in the Barossa Valley, South Australia, combined with lemon verbena, lemongrass, hibiscus, lemon myrtle, liquorice root, peppermint, hops and Murray River salt. The verjus supplies acidity, the fruit skins and hops supply tannin, and the salt supplies salinity, following NON's four-marker approach of fruit, tannin, salt and acid. It carries 0.0% alcohol and is vegan and gluten-free.
