Candy Blast Decaf is produced by Elias and Shady Bayter at El Vergel in Colombia. Working alongside their mother, Martha Montenegro, the family has become known for exploring fermentation methods and expressive fruit profiles, bringing that approach to a coffee in Monogram's Dreamy Low/No Cafs range.
This lot begins with anaerobic fermentation of whole cherries before a further co-fermentation with watermelon and yeast. The multi-stage process develops an aromatic, candy-like character while maintaining balance in the cup. Watermelon, honeydew and green apple are the leading tasting notes, making this a lively alternative to more traditional decafs. The espresso version is intended for drinkers who enjoy sweet melon flavours, bright fruit and a distinctive processing story.
