Winemaking Winemakers guide fermentation in the cellar using hand-selected yeast strains, prized for enhancing vibrant floral and exotic fruit notes. They also maintain a precise temperature regimen to safeguard the Sauvignon Blanc’s aromatic purity throughout fermentation. Paso Robles’ generous sun ripened the fruit to full expression, setting the stage for complexity and depth. A touch of lees stirring during maturation introduced a gentle roundness, softening the wine’s crisp, refreshing edge.
Vintage The 2024 vintage in Paso Robles was marked by consistently warm days and cool nights, ideal for ripening Sauvignon Blanc to full expression. Early season heat accelerated budbreak, setting the pace for a concentrated and aromatic crop. Careful canopy management throughout the summer preserved freshness despite the warmth, ensuring fruit was harvested at optimal maturity. Fermentation techniques tailored to the conditions of 2024 helped retain the vintage’s vibrant aromatics and textural balance.
Pairing Logic This vibrant Sauvignon Blanc shines alongside seafood, grilled chicken, and bright, herb-driven dishes. Its ripe nectarine and pineapple notes pair beautifully with tangy marinades, while the elderflower nuance complements fresh greens and citrusy dressings. Creamy cheeses or lightly fried fare highlight the wine’s zesty acidity and smooth finish, making each bite and sip more refreshing than the last.
