Marchesi Antinori Castello della Sala Cervaro 2019 is an legendary, world-class Italian white wine that stands as a definitive benchmark for barrel-aged Chardonnay in Italy. Pouring a beautiful pale yellow color with distinctive greenish highlights, it displays an intense, highly complex nose of fresh citrus fruit, pineapples, and acacia blossoms seamlessly layered with elegant notes of vanilla bean and crushed flint. On the palate, this mid-weight and age-worthy white is generous, refined, and impeccably structured, balancing its juicy core of orchard fruit with a lively streak of natural acidity. The wine undergoes malolactic fermentation in neutral oak barriques, yielding a creamy, mouth-filling texture complemented by typical savory and sweet undertones of hazelnut butter before finishing with remarkable length and mineral focus.

Food Pairing: Pairs magnificently with roasted lobster tail with lemon-herb butter, white truffle tagliolini, creamy mushroom risotto, pan-seared sea scallops, or aged mountain cheeses.

The Castello della Sala 2019 Cervaro della Sala relies on a time-honored formula in which the Grechetto grape adds vertical intensity and freshness and Chardonnay gives structure and sophistication. Indeed, Grechetto (with late-harvest clones) never goes above 10% of the blend, and no malolactic fermentation is performed on that variety in order to maintain its tonic and fresh personality. This stunning edition shows orchard fruit, honey and flinty notes. The Chardonnay ferments in neutral barrique from September to February, and fine-grained wood is prioritized to render a reductive winemaking technique to further preserve aromatic intensity. This mid-weight and age-worthy white is redolent of Golden Delicious apple, acacia flower and tropical fruit.
