Tasting notes: Peach, Earl Grey and rose hips
This Pink Bourbon is produced by Julio Cesar Madrid at La Riviera in Colombia and offered here in MAME’s espresso roast. MAME’s relationship with Café UBA connects the roaster with a family involved across farming and processing, whose dedicated facilities allow careful experimentation. The coffee’s identity centres on a clean, floral profile with peach, Earl Grey and rose-hip notes.
Processing starts with a 24-hour rest in whole cherry before pulping. The coffee then moves into a bioreactor for 20 hours of fermentation with a selected microbial culture, followed by washing and carefully monitored drying. In the cup, the combination of peach and tea-like flavours gives this espresso its distinctive character, while the controlled preparation preserves the delicate floral qualities of the Pink Bourbon.
