Madre Blanco is a blanco tequila from the team behind Madre Mezcal. They make it with the Padilla family distillery in the highlands of Jalisco. The agave grows on a single estate about 7,500 feet above sea level. Harvest waits until the leaves turn reddish, a sign the plants are fully ripe.
The agave is roasted in clay brick ovens. Fermentation happens in the open air. The spirit is then distilled with mineral-rich well water drawn from about 1,500 feet down. It is bottled unaged and additive-free at 48% ABV. That is stronger than most tequilas, which sit near 40%.
Raw agave and citrus meet you on the nose, with a salty edge and white pepper. The palate starts with sweet agave and bright citrus. Then it turns toward caramelized agave and clear minerality. The texture is full and smooth. Minerals, agave and a little pepper linger on the finish.
Sip it neat or over ice with a slice of orange. It also makes a lively Margarita or Paloma. Serve it with tacos, grilled seafood or fresh citrus.
If you want an additive-free blanco with real character, this bottle fits the bill.
