Las Vivas Sobre Vista Chardonnay 2023 comes from Minnes Vineyard on Sonoma Mountain, where vines cling to a steep east-facing hillside. The slope catches morning sun while cooling during afternoon hours as the sun crests the mountain. Las Vivas Sobre Vista Chardonnay 2023 is direct-pressed, then tank-settled for 24 hours before racking off gross lees. Fermentation proceeds in stainless steel until dry, followed by one year of aging in neutral oak barrels. Producer David Rothschild farms the site through Los Paisanos Vineyard Management using regenerative practices that prioritize soil health.
