Designed for home and professional brewers, it produces clean, balanced acidity with refreshing citrus-like character while giving brewers precise control over the souring process. Unlike mixed cultures or spontaneous fermentation, WildBrew Sour Pitch delivers reliable, repeatable souring performance without introducing unwanted wild yeast or bacteria into finished beer.
WildBrew Sour Pitch is formulated for kettle souring prior to the boil, allowing brewers to create bright, refreshing sour beers while maintaining complete control over fermentation. The culture rapidly converts fermentable sugars into lactic acid, creating a smooth, clean sour profile without the sharp or funky characteristics associated with mixed fermentation. It is ideal for brewing Florida Weisse, Berliner Weisse, Gose, and other modern kettle sour styles.
The culture contains a pure strain of Lactobacillus plantarum and is available in multiple package sizes to accommodate different batch volumes. For best results, add the culture to unhopped wort after cooling to approximately 100°F (38°C) or below. Maintain kettle souring temperatures between approximately 80–100°F while monitoring acidity before resuming the boil.
