Chardonnay fermented on wild yeast at Lailey Winery in Niagara-on-the-Lake. Rather than inoculating with a cultured strain, a wild ferment relies on the yeast already present on the fruit and in the cellar, which makes for a slower and less predictable fermentation and a wine that carries more of where it came from. From the 2022 Ontario vintage. VQA Niagara Peninsula.
