This wine comes from 18 and 50-year-old Silvaner vines grown on limestone and silex (flint) soils in the vineyards of Tauberzeller Hasennestle and Röttinger Feuerstein, located in the Tauber Valley sub-area of Franconia, close to the Baden-Württemberg border. The parcels are steep hillside and terraced sites farmed under Naturland organic certification since 1989.
Winemaking is minimal: grapes are destemmed and directly pressed, then fermented spontaneously with native yeast in stainless steel tanks without temperature control. The wine rests on its lees until bottling, is bottled unfined and unfiltered, and receives only a small dose of sulfur at bottling — between 20 and 25 ppm — well below the legal limit for organic wines.
Kraemer Silvaner Trocken 2017 pours a hazy lemon yellow. On the nose it is cool and restrained, with herbal notes, citrus, and yeasty lees character. The palate is bone dry, with firm structure, lively acidity, and a chalky mineral texture carrying through to a long, saline finish.
