Korbel Brut California Champagne is a California sparkling wine in a single 750ml bottle at 12% ABV / 24 proof. Korbel makes it with Chardonnay, Chenin Blanc, French Colombard, and Pinot Noir, using the traditional méthode champenoise process in which secondary fermentation occurs in the bottle. The winery harvests the grapes about two weeks earlier than it would for still wine to preserve crisp, bright character, then ferments the base wine in stainless steel. A 1% dosage gives the finished Brut a measured touch of sweetness.
Korbel describes lively citrus and cinnamon aromas leading to orange, lime, vanilla, and a hint of strawberry. The profile is refined and medium-bodied, with lively bubbles and a balanced, medium-dry finish rather than a sharply austere style. Its citrus-driven fruit and gentle sweetness pair naturally with salty snacks, fried foods, shellfish, or caviar. The bottle-fermented construction and four-grape blend make this a versatile California sparkling wine for serving chilled on its own or pouring for a toast.
