Manzanilla casks are the coastal cousins of Fino, raised by the sea in Sanlúcar de Barrameda to absorb salty, oceanic air. When Kavalan transports these rare barrels to the humid warmth of Yilan, the result is a fascinating clash of worlds. You might expect a simple dry sherry profile, but the interaction with the Taiwanese climate extracts a dense, fruity weight that is almost shocking. It’s a bottle that defies standard categorization. The liquid carries a briny, savory edge that cuts right through the distillery’s signature tropical fruit notes, creating a tension on the palate that is utterly captivating. This is a crucial pour for the drinker who is tired of the same old vanilla-heavy bourbons or peat-bombed scotches. It stands alone. Bottled at cask strength, it offers an unfiltered intensity that demands your full attention from the moment the cork pops.
