Kammme-hame-haaa is a pétillant naturel rosé from Eric Kamm in Dambach-la-Ville, Alsace, made from a blend of Auxerrois and Pinot Noir. The wine is bottled before primary fermentation is complete, trapping CO2 in the bottle to create its characteristic fizz. It is made without added sulfites, unfined, and unfiltered.
The grapes come from the Kamm estate's parcels around Dambach-la-Ville, situated at around 500 meters elevation on decomposed two-mica granite soils. This granite-dominant terroir is the same geological base as the nearby Grand Cru Frankstein, where sandy, stony soils with low water retention push vines deep into fractured bedrock. Fermentation is carried out with native yeasts from the grape skins, with no temperature control.
The wine is a lively, low-pressure sparkling rosé. Auxerrois brings orchard fruit and citrus weight; Pinot Noir contributes the salmon-pink color and red fruit lift. The result is bright, tart, and easy to drink, but serve it very cold and open it carefully over a sink — it can be explosive.
